Paste Fair 2022: when will it take place and what flavors can be tasted

After waiting two long years due to the pandemic, the Paste Fair returns in 2022, the location will be in Real del Monte, Hidalgo, where you can taste a wide range of flavors.

The corresponding edition for 2022 is number XIV and will feature a wide variety of recipes for this dish of mining origin. Among its classics are: potato paste, mole, tuna and tinga, however the sweet preparations will not be left behind with flavors of cajeta, apple, rice, among others.

Although the cake will be the main dish, it will also there is the possibility of trying regional or seasonal dishes such as chiles en nogada, or ingenious combinations between the two preparations, it is expected to find unique flavors.

The Paste Fair will take place between October 14 and 16 in the center of Real del Monte, in the state of Hidalgo. It is important to go well dressed because the area is characterized by a fairly cold climate, and due to the resurgence of COVID cases, it is essential to always carry antibacterial gel and face mask.

Paste is a traditional food from the state of Hidalgo, however its origin dates back to the Cornish miners in England during the 19th century.who introduced Cornish paste to the region and from there it has undergone modifications until ending up in what is currently known in Mexico.

It is considered a typical dish of Pachuca de Soto and Mineral del Monte.. Its main characteristic is the cooking of its ingredients and its filling.

The ingredients of the traditional paste must be raw when they are wrapped in the dough, be it potato, onion, minced meat, pepper and chili, currently there are fillings derived from local gastronomy such as mole, beans and tinga, which They are precooked foods.

Regarding gastronomy, the migrants from the Cornish mines began to cook the Cornish paste, however, due to the difficulty of preparation, the Mexican miners renamed it to only paste and also modified its content.

It was common for the pastes to be kept hot during working hours, and they also had to wear a braid, with which the miners held the paste so as not to dirty it.

The recipe was transformed over time as the miners began to accept the inclusion and combination of ingredients from the region, which gave a seal and identity to what is now called Hidalgo paste.

The elements that were incorporated were parsley, refried beans, rajas, mole, tuna, cheese, chicken, and even pulque, giving the product identity and Mexican character.

In the 1970s and 1980s, the various family businesses were pioneers in the proliferation of paste, in the municipalities surrounding Mineral del Monte, mainly in Pachuca de Soto.

The peak of these establishments occurred from the 1990s and 2000s, with the emergence of different commercial chains in the style of fast food. Managing to spread in the center of Mexico such as the state of Mexico, Mexico City, Querétaro, Puebla and Tlaxcala.

For July 31, 2018 the LXIII Legislature of the Congress of Hidalgo declared Mineral del Monte as Cradle of Paste in Mexico, and paste as Gastronomic and Cultural Heritage of Hidalgo.
